Cucumber Avocado Salad with Lemon Dressing


This Cucumber Avocado Salad is not only delicious but also packed with hydrating ingredients that promote healthy skin. Cucumbers are rich in water content, while avocados provide healthy fats that help maintain skin moisture and elasticity. The lemon dressing adds a refreshing citrus flavour and an extra dose of vitamin C for skin health.


Ingredients:


  • 1 large cucumber, thinly sliced

  • 2 ripe avocados, diced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup fresh cilantro, chopped

  • Handful of rocket

  • Handful of broccoli sprouts

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • Sea salt and black pepper to taste


Instructions:


  1. Prepare the Vegetables:

  • Thinly slice the cucumber and red onion. Dice the avocados into bite-sized pieces.

  1. Mix the Salad:

  • In a large bowl, combine the cucumber, avocado, red onion, and fresh coriander.

  1. Make the Dressing:

  • In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, sea salt or Celtic salt, and black pepper.

  1. Combine and Serve:

  • Pour the lemon dressing over the salad and gently toss to combine, ensuring the avocado pieces remain intact.

  • Serve immediately or refrigerate for up to an hour to allow the flavours to meld.
